
Ingredients 1 small onion 2 tbsp olive oil 1/2cup water a nice bunch of basil 150 gr ricotta 2 tbsp Parmesan cheese
In a small saucepan put the finely chopped onion, the oil and the water. Bring to boil and let simmer covered for 10 minutes until onion is softened and water is reduced. Work the ricotta with the back of a fork to have a smooth paste, add the ricotta to the onion, mix well and turn off the heat. The sauce has to be runny like pesto sauce. So if necessary add some water. Chop basil finely and add to the ricotta. Cook the penne al dente, drain well. Return to pan and add the ricotta pesto.
Serve with parmesan cheese and fresh black pepper.
